So the other day I was craving vegetables like a crazy person. Really, Baby and I just needed ALL OF THE VEGETABLES, TOUT DE SUITE. And so. This salad was born. I thought I’d share it here today, because it is the bomb.com. And also, honestly, just throw all of the vegetables you have on hand in a bowl, and you’re bound to have a delicious creation. Which is why I love salads. Because salads make me feel like a chef, even though really I’m the furthest thing from. ;)
kale (half a bag of pre-cut kale)
cabbage, cut into strips (I used half a head)
carrots, grated (2-3)
craisins on top
chicken (or salmon, or any meat you like), avocado, walnuts, sunflower seeds.
I used a champagne dressing we happened to have in our fridge and it was delish. Poppyseed or balsamic vinaigrette would be yummy too. Really, anything. This salad is SO GOOD and I made a huge portion and stored it in the fridge in mason jars, so we have individual salads for a few days to come! And that, my friends, is how I “meal plan.” ;) It’s a work in progress.
